Tin Poppy Bird's Nest Cookie Recipe

Bird's nest cookies (also called thumbprint or thimble cookies) are probably my all time favorite Christmas cookie. There is still dispute of its origin, but is often credit to either the people of Poland, Sweden or the Jewish people of Eastern Europe.


This simple short dough recipe is from my Grandma's recipe book, love you Nana, which also has recipes for Flapper Pie, Jelly Roll and Nuts &Bolts;)




Bird's Nest Cookies Recipe


1 cup butter

1/2 cup sugar

2 eggs (separated)

1 tsp vanilla

2 cups flour

crushed walnuts or coconut ~ I used poppy seeds of course with sesame, pumpkin and coconut.


Cream butter, sugar. Add beaten egg yolks and vanilla, mix well then incorporate the flour and mix. Lightly beat your egg whites.


Roll cookie dough into balls the size of a walnut, dip into the egg whites,



then your crushed walnuts, or in this case, poppy seeds, sesame, pumpkin and coconut;)




Place cookie on cookie sheet and dent the the center of your cookie with a thimble....have one of those? Or you can use your thumb;)

Bake at 350 for 10 min on upper rack, re dent the centers and bake for another 5 min.



While still hot, place a teaspoon of jelly into the center. These cookies have apricot lavender jam, and plum jam. You can use whatever jam you have around...
